Ingredients
1 small red bell pepper
1 small zucchini
250 g mushrooms (champignons)
1 onion
2 garlic cloves
2 tablespoons olive oil
300 g small noodles (macaroni or gnocchi)
Salt and pepper to taste
300 g ground beef
2 tablespoons tomato paste
500 ml vegetable broth
200 g quark (or mild cream cheese)
1 bunch green onions
Instructions
Heat oil in a large pan. Sauté onions and garlic until soft. Add red bell pepper and zucchini, sauté for 3-4 minutes. Add mushrooms and cook until browned.
In the same pan, cook ground beef with a pinch of salt and pepper until browned. Stir in tomato paste and mix well.
Add vegetable broth and noodles to the pan. Bring to a simmer, cover, and cook for 10-12 minutes until noodles are tender.
Stir in quark until a creamy sauce forms. Taste and adjust seasoning. Garnish with chopped green onions before serving.
