Ingredients
200 g cherry tomatoes
1 cucumber (or salad cucumber)
1 red bell pepper (or pointed pepper)
150 g feta cheese, cubed
100 g olives (non-alcoholic)
1 red onion, optional
1 handful arugula
150 ml olive oil
30 ml balsamic vinegar
1 tsp honey
fresh dill or dill from a seasoning packet
Instructions
Wash and thoroughly dry all vegetables to maintain crispness.
Dice the tomatoes, cucumber, and red pepper into bite-sized pieces.
Chop the red onion if using.
Tear the arugula leaves coarsely and place them in a large mixing bowl.
Add diced tomatoes, cucumber, red pepper, red onion, feta, and olives to the bowl.
In a separate small bowl, whisk together olive oil, balsamic vinegar, honey, and chopped dill.
Pour the dressing over the salad just before serving and toss gently to coat.
Transfer to a serving platter and garnish with additional arugula if desired.
Notes
For a vegan option, substitute feta with vegan cheese and ensure the dill is vegan.
Dress the salad just before serving to prevent sogginess.
Store leftovers in the refrigerator for up to 2 days, but the flavor is best fresh.
