Description
A richly flavored Ethiopian-inspired beef stew with warm spices, a touch of sweetness, and creamy noodles.
Ingredients
Scale
- 600 g beef chunks (e.g., shoulder), diced
- 2 tbsp neutral oil
- 1 large onion, finely chopped
- 3 garlic cloves, finely chopped
- 1 tbsp Ras el Hanout or similar spice blend
- 1 tsp Garam Masala (optional for depth)
- 1 tsp hot paprika or cayenne (to taste)
- 1 tbsp tomato paste
- 500 ml beef broth
- 400 g canned chopped tomatoes
- 2 large potatoes, diced
- 2 carrots, sliced
- 1 tbsp lemon juice or lime juice
- Fresh coriander or parsley for garnish
- Salt and pepper to taste
Instructions
- Heat the oil in a heavy pot.
- Sauté the onion until translucent, then add garlic and cook for 1 minute.
- Add the spices and roast briefly until fragrant.
- Stir in the tomato paste and let caramelize slightly.
- Add the beef and brown on all sides.
- Season with salt and pepper.
- Pour in the broth and canned tomatoes. Bring to a boil, then reduce heat and cover.
- Add the potatoes and carrots. Let simmer gently until the beef is tender (about 60–90 minutes). Add more water if necessary.
- Stir in the lemon juice. Serve hot, garnished with fresh coriander.
Notes
If Ras el Hanout is unavailable, mix 1 tsp cumin, 1 tsp coriander, 1/2 tsp cinnamon, and 1/2 tsp paprika. Sweet potatoes can be used instead of regular potatoes for a sweeter flavor. For a vegetarian version, replace the beef with lentils or chickpeas and increase the broth accordingly.
