Description

A quick and easy one-pot Bolognese made with beef, fresh herbs, and garden tomato sauce. Cremy pasta dish perfect for busy weeknights with minimal cleanup.


Ingredients

Scale

1 tbsp olive oil
1 brown onion, finely chopped
2 garlic cloves, minced
500g ground beef
500g pasta sauce with garden vegetables
400g canned chopped tomatoes
750ml chicken broth
300g penne noodles
60g frozen peas
20g grated Parmesan cheese
Basil leaves
Mixed salad greens for serving


Instructions

Heat oil in a large pot over medium heat
Sauté onion until softened (4-5 minutes)
Add garlic and cook for 1 minute
Add ground beef, break up with spoon and cook until browned
Stir in tomato paste, canned tomatoes, and pasta sauce
Add chicken broth and bring to simmer
Add penne noodles and peas
Simmer uncovered for 12-15 minutes until noodles absorb broth
Season with salt and pepper
Serve topped with Parmesan and basil

Notes

Use red wine-free tomato sauce
Test noodles for doneness
Reserve some liquid for loosening sauce if needed
