This vibrant grilled summer salad brings together zesty citrus and smoky grilled vegetables for a fresh, aromatic dish perfect for warm evenings. A perfect blend of blattsalat, cherry tomatoes, bell peppers, and red onions, seasoned with a tangy balsamic dressing.
Ingredients
200 g mixed leaf salads
150 g cherry tomatoes
1 red bell pepper
1 red onion
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Salt, to taste
Pepper, to taste
Instructions
Wash and dry 200 g mixed leaf salads.
Halve the cherry tomatoes.
Dice the red bell pepper into strips.
Peel and slice the red onion into rings.
In a bowl, combine the olive oil, balsamic vinegar, salt, and pepper to make the dressing.
Toss the cherry tomatoes, bell peppers, and red onions in some of the dressing before grilling.
Grill the vegetables for 5-7 minutes on a preheated char grill until slightly charred and softened.
In a large serving bowl or on a platter, layer the mixed greens and add the grilled vegetables.
Pour the remaining dressing over the salad.
Toss gently to combine and serve immediately.
Notes
The salad tastes best when served fresh immediately after grilling.
Feel free to substitute or add other grilled vegetables like zucchini or eggplant.
For a more intense flavor, briefly reduce the balsamic vinegar in a pan for a few seconds before using it as a dressing.
